Chef Urban graduated from Berkley Bauman College, receiving her culinary
degree and soon after working at ByWater in Los Gatos. After working several chef jobs she eventually moved down to Austin, TX and opened Plant Box.
Although moving from the Bay to Austin, comes with certain challenges. Urban wanted focus Plant Box around making organic healthy asian-inspired vegan bowls to give the city a different flavor that is usually dominated by meat-focused dishes.
